What is the difference between atta and Chakki Atta?
The chakki atta is preferred more than the roller mill atta for the texture and taste of the Chapati/Roti (flat bread of India). Indian atta is a very very finely milled wheat flour. But Chakki alters the starch (the force is intense) which is not good for western bread making but great for indian bread chapati/roti.
Can whole wheat flour be substituted for atta?
Simply replacing whole wheat flour with atta will yield a dense, crumbly bread that doesn’t hold its shape, because of the flour’s lower protein content, which means less stretchy gluten (via My Favourite Pastime and Kannamma Cooks).
